Vegetarian Giro Stages 13 & 14: The One Where Fred Marx Does a Guest Appearance
This is an original recipe by our very own Fred Marx (aka Chris).
When I decided to tackle the Giro, I immediately thought of approaching him for a guest post as he always provides suggestions, insights and ideas on anything food related in between all his snark. Undaunted by my request, he whipped up this awesome Goat Cheese, Grilled Japanese Eggplant and Zucchini with Balsamic Red Wine Reduction recipe. He's definitely allowed into my kitchen whenever he'd like. (Hear that, Mark?)

(Side note: Although I lobbied to try to get my work to close offices during the Giro, my efforts were fruitless. In fact, they must have been pretty annoyed by my efforts. They kicked me out of the office and sent me on the road for some work travel. So, I'm away from my kitchen for a little bit and my posts are going to slow up over the next few days. I'll be back! That looks great.
This is probably heresy, but I’m not that crazy about sun-dried tomatoes so I’d probably swap for some fresh.
He’s here, really? Tell him I said hi. How’s he doing?--DZ, on being told Floyd Landis was present at the ToC.
Fresh will most likely turn to goo, but try it and see.
The sundrieds are re-hyrdated, so they are not little bits of chewy….. Also the concentrated flavor of the dries tomato is needed to stand up against all the other flavors.

on consideration..
One might be able to use a good Roma tomato. Quarter it and remove the core and seeds to reduce the water content, then slice the remained which is skin and a layer of “meat” left after seeding the tomato.
