Speed wobbles - what's the cause and how to deal?

I'm the first to admit that I am a horrible descender on the bike. I don't like to go fast downhill once the grades are above about 5-6%.

Today I was descending a steep hill (10-16% pitches) and my bike started wobbling really badly. I thought I was going to crash, but managed to get a foot out of the pedal and get a bit more control in time for the next bend in the road. I was totally shit-scared during and after this happened, and I don't want it to happen again.

Anyone know what causes these speed wobbles, and what the best strategy is to deal with them? I'm tall (6-ft 4-in) and heavy (~ 230 lbs) so I imagine that is part of it.
